Bold and tart but appealingly sweet and refreshing salad dressing

Ingredients:
  • juice from 2 large lemons (2/3 cup)
  • 2 tablespoons fresh mint, finely chopped
  • 1 tablespoon sugar
  • 2 teaspoons mustard powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon fresh ground black pepper
  • 4 tablespoons olive oil
  • 2 tablespoons poppy seeds
Instructions:
  • Whisk together the lemon juice, mint, sugar, mustard, salt and pepper. Stir in the olive oil and poppy seeds, and mix again just before serving.

  • Keep covered in the refrigerator for up to 4 days.

Makes 1 cup
